I like the recipes, I’m always here for a good fiber recipe! Funny enough, my son (3.5 years old) LOVES falafel. He was diagnosed with cancer at 19 months old and has been on and off cisplatin for long enough to destroy his appetite and taste buds, so we find it comical that his extremely limited list of acceptable foods includes falafel! We will definitely try this combo! We bake ours too.

Here is my easy nutritious meal, it takes maybe 15mins to prep and cook, keeps for about 4 days:
1 diced white onion (can buy pre-chopped)
1 package of fake beef crumbles (optional)
2 cans black beans, rinsed and drained
1 can of tomato sauce (subs: crushed tomatoes, salsa, basic marinara sauce)
1 bag of baby spinach, roughly chopped (can leave whole, personal preference)
1 bunch cilantro, roughly chopped (optional)
2 heaping tbsp of burrito spice mix***
Sauce onion in a little oil, add fake beef and brown a little, add beans, add burrito spice, toast spices a little (this should all take maybe 5mins).
Add tomato and spinach and cook till heated through. Add lime juice and cilantro.
Serving options:
With guacamole/sour cream/salsa
Corn chips
OR
Fill some tortillas with the bean mix plus grated sharp cheddar and bake at 350 for 15 mins
OR
Serve over rice
1/2 lime, squeezed
***burrito spice mix - you can just buy this but I absolutely hate the sensation of my mouth burning at all, so I find most of these too spicy. The recipe I use is:

One of my favorite summer meals is: extra sour garbanzo celery salad. 1 can garbanzos (or home cooked equivalent), a few stalks of celery with leaves, chopped, and then a nice vinaigrette with olive oil, sherry vin, and some mustard and salt to taste. Stays will in the fridge and piles onto toasted crusty bread (sourdough is perfect) for an open face sandwich. It’s a 3 min meal and keeps you fed.
(Also quick pickled green beans in a similar vinaigrette are another winner on everything).

My husband and I have been really hit hard by Covid (first timers, seniors) for over two weeks now. When things got really bad the last few days, we’ve been pretty unable to even prepare simple meals. We’ve been astonished and so grateful for the kindness of near-strangers from our community who’ve dropped off meals for us this week, and it’s been so helpful and welcome. I would love to do the same for you and Oliver, but I’m still testing positive and too far away, in Marin. So, instead, is there a way to send you a gift card instead for takeout or delivery, or to participate in a meal-train for you? I’m sure I’m not alone in wanting to make this time easier for you both. Sending continuing healing thoughts.
