Mmm, vegan tacos! So underrated. I highly recommend giving pumfu (pumpkin seed “tofu”) a try. We like the chorizo flavored one for tacos. It’s not as spicy as soyrizo, so if you like add-ins (we like mushrooms and/or onion and/or black beans), you might need additional seasoning (or extra salsa). Of course, plain pumfu can be seasoned to your liking. But beware pumfu is a lot more expensive than tofu, understandably so.
